Instructions

Step 1: Prepare the Chicken

  1. Cook the Chicken: In a large pot, add the boneless, skinless chicken breasts (or thighs). Cover with water and bring it to a boil. Reduce the heat to a simmer and cook the chicken for about 15-20 minutes, or until fully cooked (internal temperature should reach 165°F or 74°C).
  2. Shred the Chicken: Once the chicken is cooked, remove it from the pot and set it aside to cool. When it’s cool enough to handle, shred the chicken into small, bite-sized pieces. Be sure to remove any bones if you’re using thighs or other cuts with bones.

Step 2: Cook the Rice

  1. Cook the Rice: In a separate pot, add 2 cups of water and bring it to a boil. Add the 1 cup of rice to the boiling water, reduce the heat to low, and cover the pot.   2. Optional Veggies: While the rice is cooking, you can prepare any vegetables you’re adding. If using carrots and peas, finely chop or grate the carrots, and steam or boil the peas until tender.

Step 3: Combine Chicken and Rice

  1. Combine the Ingredients: Once the rice is cooked and the chicken is shredded, it’s time to combine everything. In a large mixing bowl, add the shredded chicken, cooked rice, and optional veggies. If you’re using turmeric or olive oil, stir it in at this point.
